AIP is looking for a Lead Cook II Crew to work in Brownsville, TX. To join our team of outstanding professionals, apply today! The Food Service Cook II Crew Leader oversees the work of Cook I, Food Service Workers, and non-citizen voluntary workers to ensure the production of meals. The Cook II Crew Leader ensures adherence to ICE-approved menus special diets and recipes in accordance with ACA and PBNDS standards. The Cook Crew Leader ensures compliance with OSHA, PIDC, and AIP safety regulations, Responsibilities Oversees Cook I, and Food Service Workers and non-citizen volunteer workers ensuring daily meals are produced.
Conducts food service department inspections in accordance with establish inspection procedures and worksheets.
Maintains daily food service production and sanitation sheets, including tray counts, temperature logs and other related reports. Must ensure that food service reports are submitted accurately and by end of shift.
Must maintain a heightened security awareness when working with non-citizens, and never allowing them to handle chemicals, class A or class B tools or institutional keys. Ensures that staff and non-citizen volunteer workers wear the appropriate PPE for the task assigned to include, clothing, reflective gear, gloves, aprons, safety shoes or boots. Ensures staff and non-citizen volunteer workers use the appropriate equipment or devices for the specific task assigned such as, dolly's, brooms, mops, rolling carts, flat bed carts, step ladders etc. Ensures that ICE approved regular menus and special diets are adhered to in accordance with ACA and PBNDS standards. Review menus to determine type and quantity of food to be prepared based on population needs.
Operates the tool control room and issue cooking utensils and maintain control of the knife cabinet. Ensure accurate accountability of Class A and Class B tools. Ensure staff adhere to key, chemical and tool control procedures in accordance with established policies and procedures.
Oversees the food production ensuring food is cooked according to established recipes and/or preparation instructions. Ensure food production is completed in a timely manner.
Monitors the baking, roasting, broiling, frying, and steaming of foods according to Monitor the carving and dividing of portions into individual servings.
May modify the menu and submit the meal substitution request to the AFSM / FSA for final approval.
Ensures food temperatures are taken and recorded in accordance with the ACA and PBNDS standards.
Inspect foods for completion of cooking time and adjust heat controls as needed. Taste test foods for quality assurance.
Supervises the loading of food carts ensuring meal tray counts are correct. Oversee the loading and unloading of food carts on the food service truck.
Ensures the delivery of meal trays to non-citizen occupied areas in accordance with the established feeding schedule. Ensures the sanitation of the exterior and interior of the food service department is always maintained by following the established cleaning schedule.
Administer food service training and professional development for staff and sanitation training for non-citizen volunteer workers. Ensure all training is documented and filed for quality assurance.
Ensures adequate staffing is maintained on each shift to sustain an ongoing food service operation.
Ensures staff and non-citizen volunteer workers are working in a safe environment by adhering with OSHA, PIDC, and AIP safety regulations. Actively promote a robust safety culture amongst staff and non-citizen volunteer workers
Immediately report and document all significant accident/injury incidents to the AFSM or FSA. Reports all damaged or unserviceable equipment to the AFSM. Submit maintenance work orders on equipment and coordinate repairs or replacement of AIP or ICE owned equipment.
Addresses and documents staff concerning safety awareness, hazard abatement and performance issues.
Makes post assignments for the following day, and ensure personnel are rotated. May be designated as the acting AFSM during their absence.
Assists food service staff during peak food production, or when short of staff.
Performs other duties as directed by AIP management. Qualifications A high school diploma or GED is required
Minimum one-year experience in large scale cooking in a commercial or industrial kitchen.
Able to obtain a State of Texas Food Handlers Permit.
Ability to become First Aid, CPR and AED certified with initial training.
US citizen or a person lawfully admitted into the United States for permanent residence and have resided in the U.S. for at least the last five years.
Possess a high school diploma or equivalent (GED).
Pass a criminal background and consumer credit check (no criminal record).
Obtain and maintain a DHS/ICE government clearance.
Pass all pre-employment and random drug tests.
Pass a medical examination and meet health requirements.
At least 18 years of age.
Possess current/valid Texas food handlers permit.
Knowledge of day-to-day operation of an industrial kitchen.
Capability of following and understanding written and verbal orders, policies and regulations.
Incumbent shall be literate and able to interpret printed rules and regulations, recipes, and detailed instructions.
Incumbent must exercise good judgment, alertness, an even temperament, and render satisfactory performance through his/her responsibilities.
Ability to maintain poise and self-control during situations that involve mental stress, such as fires, explosions, disturbances and building evacuations
Maintain a professional personal appearance and calm demeanor
Possess a high degree of integrity, accountability and ability to adhere to the American Correctional Association and DHS ICE standards
Demonstrate an ability to work with a diverse population of people, including people of different cultures, with different values and lifestyles, with a cross-cultural perspective
Maintain current/physical residence in the continental United States.
Must meet all medical requirements, to include all vaccines/immunizations to include COVID
Must have a valid driver's license
Possess ability to read and follow instructions and recipes in English
Possesses dexterity and use of motor skills to execute required kitchen tasks
Ability to work with a diverse population, speaking numerous languages with and from different cultures and from various countries around the world.
